300g Self-Raising Flour

75g Plain Flour

1 tsp Ground Cinnamon

1 pinch Salt

400ml Buttermilk

2 tbsp Sun-Pat Smooth Peanut Butter

100g Raisins

50g Caster Sugar

1 Egg

100ml Vegetable Oil

How to make

  • Preheat the oven to 180˚C/Gas 4.

  • Whisk the egg and sugar together.

  • Add the buttermilk, oil, and Sun-Pat Smooth Peanut Butter to the bowl and mix.

  • Sift in the flours, cinnamon and salt.

  • Lastly, fold in the raisins and pour into a greased and lined 2lb loaf tin.

  • Bake in the centre of the oven for around 60 minutes. (To test if it is ready, insert a metal skewer into the centre. If it is clean when it comes out, the loaf is ready.)
