For the salad:

200g King Prawns cooked and peeled

100g Bean Sprouts

50g Carrot grated

1 small bunch Coriander

1 small bunch Mint

1 Red Chilli thinly sliced

1 packet pre-cooked medium noodles

4 Lime wedges to serve


For the dressing:

Zest and juice of 2 limes

1 tbsp Sweet Chilli Sauce

1 tbsp Soy Sauce

1 tbsp Sun-Pat Smooth Peanut Butter

1 tbsp fresh Ginger (Thumb sized piece peeled and grated finely)

1 tbsp Vegetable Oil

How to make

  • Whisk the lime zest and juice, sweet chilli sauce, soy sauce, Sun-Pat Smooth Peanut Butter, vegetable oil and ginger together to combine. Once mixed, set aside while you make the salad.

  • Roughly chop the mint and coriander. 

  • Add to the prawns, bean sprouts, carrot, chilli, noodles and mix.

  • Serve the salad with the delicious peanut dressing and lime wedges.
