
YOU WILL NEED
For the salad:
200g King Prawns cooked and peeled
100g Bean Sprouts
50g Carrot grated
1 small bunch Coriander
1 small bunch Mint
1 Red Chilli thinly sliced
1 packet pre-cooked medium noodles
4 Lime wedges to serve
For the dressing:
Zest and juice of 2 limes
1 tbsp Sweet Chilli Sauce
1 tbsp Soy Sauce
1 tbsp Sun-Pat Smooth Peanut Butter
1 tbsp fresh Ginger (Thumb sized piece peeled and grated finely)
1 tbsp Vegetable Oil
How to make

Whisk the lime zest and juice, sweet chilli sauce, soy sauce, Sun-Pat Smooth Peanut Butter, vegetable oil and ginger together to combine. Once mixed, set aside while you make the salad.

Roughly chop the mint and coriander.

Add to the prawns, bean sprouts, carrot, chilli, noodles and mix.

Serve the salad with the delicious peanut dressing and lime wedges.
